The role of digestive enzymes in the digestive system is introduced through discussion and activities on food composition. Proteins, carbohydrates and fats, all may be found in various foods. Exploring the break down of starch to sugar, students perform the starch-iodide test. Mosaics are made to depict the different compositions of molecules of food.
